Spices

If you find yourself in Marrakesh, make sure you experience the street food stalls located in Jemaa El Fna Square. However, traveling through this magical land, you will be able to experience firsthand not only the ever-changing landscape, but also the cultural differences that exist within the country and which in turn shapes this rich cuisine. Some of the famous Moroccan dishes that you definitely need to taste are:

Moroccan Couscous

Couscous:

This is the most famous Moroccan dish that pretty much every household prepares every Friday (The Muslim holy day). There are different kinds of couscous including barley, corn and semolina. It is either made with chicken, lamb, beef or a combination of all three which is called Couscous Royal, plus vegetables such as squash, carrots, Courgette (Zucchini) and turnip. Other times Couscous is prepared with a mix of sweetened Onions, Raisins and Chickpeas.

All the variations in preparing this amazing dish has to do with the local culture that is unique to different areas in Morocco.

Tajine

Tajine:

Is a traditional dish typically cooked using different types of Meats (Lamb, Beef and Chicken) and vegetables. It is slow cooked on low fire and is best to use a traditional Tajine Pot that allows it to circulate the flavors and aroma.

Some of the famous ingredients Moroccans would use are prunes, olives and lemon. In Morocco Tajine is generally prepared for lunch along with different types of Moroccan Salads such as Eggplant Salad (Zaalouk) and Green Peppers with Tomatoes (Taktouka). Moroccans also would enjoy the Meatball Tajine that is made with tomatoes and sometimes eggs are added to it. Another example of a Tajine is made with Fresh Sardines mixed with tomato sauce.

Harira (Traditional Moroccan soup):

This dish is mainly for dinner and is typically made with chickpeas, tomato sauce, different types of spices and flour. It is normally served with dates and bread.

Rfissa:

This dish is most of the time prepared using chicken with onion sauce, garlic and a variety of spices. Then, Moroccan Traditional Pancakes are cut into small pieces and mixed into the sauce.

Moroccans would usually eat using their hands, but forks are available for anyone not comfortable doing so.

If you like to have a glass of wine with your food, not to worry. Much like the rich cuisine, Morocco produces a large variety of wines to accompany it. You will find a great variety of wines like the ones in southern France, such as Rose and Red.
